Three Day Cake
This cake was one of my dad's favorites. It can be made in three different flavors (coconut, pineapple, or strawberry). Daddy loved the coconut best, but pineapple was a fast second. Mother usually always made one some time during the holiday season. However, it rarely made the three day refrigeration as instructed in the directions.
Three Day Cake:
Filling and Icing:
2 cups sour cream
2 cups sugar
2 cups coconut or well drained crushed pineapple, or well drained frozen strawberries. Mix and place in refrigerator overnight.
Bake one Duncan Hines Butter Recipe Golden cake mix according to directions in 2 - 9" pans. When cool, slice into four layers. When putting cake together, place each layer cut side up using one fourth of filling for each layer. For top, mix one small tub of Cool Whip with remaining filling. Cover top and sides of cake. Refrigerate for three days before cutting. Keeps well and freezes well.
