Sweet Dough Rolls

Mother always loved to make rolls. I'm not sure she ever bought rolls at the store for a family holiday meal. She would also make us donuts on occasion, which were a real treat.

Sweet Dough Rolls:

Mix together 2 cups of lukewarm milk, 1/2 cup sugar, and 2 teaspoons salt. Crumble 2 cakes (or 2 packages) yeast into liquid mixture until dissolved. Stir in 2 eggs and 1/2 cup soft shortening. Add 7 - 7 1/2 cups sifted flour. Mix well. Let rise until double in bulk. Punch down and let rise again. Shape into rolls and let rise until double in size. Bake 10 minutes in oven which has been preheated to 450. (Note: If desired, after rolls have been shaped, they may be frozen and baked at a later date.)

Richer Sweet Dough (For Donuts):

1 cup milk

1/2 cup sugar

1 teaspoon salt

2 cakes yeast

2 eggs

1/2 cup shortening

4 1/2 - 5 cups flour

For donuts, do not let rise a second time - instead roll mixture out and cut donuts and pop into very hot grease.
