German Chocolate Layer Cake
Every now and then a bride would request a German chocolate groom's cake. I'm not sure what Mother's secret was, but she had the most moist German chocolate cake ever!! I have had many since hers and none compare to the moistness of her cake.
German Chocolate Layer Cake:
4 egg whites
2 cups sugar
1 cup shortening
dash salt
1 teaspoon vanilla
1 package German chocolate melted in 1/2 cup hot water
4 egg yolks
1 cup buttermilk
1 teaspoon soda
2 1/2 cups flour
Beat egg whites stiff. Set aside. Cream sugar, egg yolks, and shortening. Add remaining ingredients and mix thoroughly. Fold in stiffly beaten egg whites. Pour into 3 greased and floured 8" round pans.
Icing:
1 cup sugar
2 tablespoons flour
1 cup canned milk
1 teaspoon vanilla
1/2 stick margarine
Cook ingredients until slightly thickened. Add 1 can coconut and 1 cup chopped pecans.
