Crunchy Jumble Cookies
This was always one of Mother's choices when she had to serve assorted cookies (usually showers). I'm really not sure why she liked this so much...possibly because it was a little different from all the rest. These are a very crisp cookie.
Crunchy Jumble Cookie:
Preheat oven to 350. In a small bowl combine 1 1/4 cups unsifted flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Set aside. In a large bowl, combine 1/2 cup softened butter and 1 cup sugar, beat until creamy. Add 1 egg and 1 teaspoon vanilla; mix well. Blend in flour mixture. Stir in 2 cups crisped rice cereal, one 6 oz. pkg. Nestle's Semi-Sweet real chocolate morsels and 1 cup raisins (optional). Drop by level tablespoonfuls onto lightly greased cookie sheets. Bake approximately 12 - 15 minutes.
