Cream Fruit Salad
My daddy could make a meal on fruit salad. That was always the first thing he would "snack" on after a holiday meal. He LOVED it.
Cream Fruit Salad:
1 - 20 oz. can crushed pineapple
1 package lemon jello
2 - 3 oz. packages cream cheese broken into small pieces
1/2 cup finely chopped celery
1/2 cup chopped pecans
1/8 teaspoon salt
1 cup heavy cream, whipped
Drain pineapple juice and add enough water to it to make 2 cups. Boil juice and water and add gelatin; stir until dissolved. Chill until it has a consisitency of unbeaten egg whites. Stir in remaining ingredients except cream. Fold whipped cream in and chill until firm. Serves 12.
