"Bank" Easy Sugar Cookie

When I was growing up my mom catered for our local banks every Christmas. The two local banks would serve refreshments in their lobby as a "treat" for their customers. One bank served sugar cookies with spiced tea. Mother would literally have to bake hundreds of dozens of cookies (I cannot tell you how many cookies I helped roll into balls) , as we served them for DAYS before Christmas. She would hire me and my high school friends to work the bank as servers of the treats. This would be our "Christmas money" each year and we made MANY memories working our Christmas holiday break at the bank. (By the way...the cup we always used was one of my grandmother's cups and I still have it today.)

Easy Sugar Cookies:

2 cups flour

3/4 teaspoon baking powder

1/2 teaspoon salt

1/2 cup butter

1/2 cup sugar

1 egg

1 teaspoon vanilla

1/2 teaspoon almond extract

Sift flour, mix with baking powder and salt. Cream butter well, blend in sugar, and add egg. Beat mixture until smooth. Stir in flavorings; then add flour and mix until smooth. Chill dough and form into balls half the size of a walnut.  Place on greased cookie sheet (approximately 3" apart). Using the bottom of a dampened coffee cup dipped in sugar, press the cookie flat. Bake 10 minutes at 400. Makes approximately 4 dozen.
