Kentucky Pecan Cake

Sounds similar to a coffee cake...

Kentucky Pecan Cake:

2 1/2 cups self-rising flour

1 1/2 cup vegetable oil

2 1/2 tablespoons ground cinnamon

2 tablesppoons hot water

4 egg whites

2 cups sugar

1 cup applesauce

4 egg yolks

1 cup chopped pecans

powdered sugar

Beat egg whites (at room temp) until stiff. Combine sugar, oil, and egg yolks until creamy and smooth. Add flour, cinnamon, applesauce, and hot water. Beat until smooth. Fold in egg whites and pecans. Pour mixture into an ungreased tube pan. Bake at 350 for 1 hour and 30 minutes. Invert pan and cool completely. Remove from pan and sprinkle top of cake with powdered sugar.

Breakfast Cookies

No story here...I just found this in the MANY recipes...and it sounded different.

Breakfast Cookies:

1 cup unsifted all-purpose flour

3/4 cup sugar

1/2 cup well drained bacon bits (8 - 10 slices)

1/2 cup Chiffon soft margarine

1 egg

2 cups Post Toasties Corn Flakes

Cream margarine, egg, sugar. Add remaining ingredients. Drop by tablespoonfuls onto greased cookie sheets. Bake approximately 15 minutes or until brown. Makes about 2 dozen.

Toasted Butter Pecan Cake

Never had this cake that I can recall, but it sounds great. My mother loved ANYTHING that was butter pecan.

Toasted Butter Pecan Cake:

2 cups chopped pecans

1 1/4 cups butter

3 cups sifted, all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 cups sugar

4 unbeaten eggs

1 cup milk

2 teaspoons vanilla

Toast pecans in 1/4 cup butter in a 350 oven 20-25 minutes. Stir frequently. Sift flour with baking powder and salt. Cream 1 cup butter and gradually add sugar (creaming well). Blend in eggs. Add dry ingredients. Stir in vanilla and 1 1/3 cups pecans. Bake in 3 layers at 350 for 25-30 minutes.

Butter Pecan Frosting:

Cream 1/4 cup butter and add 1 pound (4 - 4 1/2 cups) sifted powdered sugar, 1 teaspoon vanilla, and 4 - 6 tablespoons evaporated milk. Stir in remaining toasted pecans.

Beer Bread

Mother made this often and it usually didn't last long. Great bread!!!

Beer Bread:

3 cups self rising flour

3 tablespoons sugar

1 - 12 oz. beer

Mix sugar and flour together then add beer. Dough will be stiff. Grease loaf pan. bake at 350 for one hour (10 - 15 minutes before done rub top of bread with butter).

Caramel Oatmeal Chewies

I took a small break from posting recipes to enjoy the holiday season with my family.  Here is a recipe I don't anything about, but it sounds a little different and very good.

Caramel Oatmeal Chewies:

1 3/4 cup Quaker Oats

1 1/2 cups flour

3/4 cup brown sugar

1/2 teaspoon soda

1/4 teaspoon salt

3/4 cup melted margarine

1 cup chopped nuts

1 - 6 oz. package chocolate chips

1 - 14 oz. caramels

1/4 cup water

Preheat oven to 350. Grease 9 x 13 pan. Combine the first five ingredients. Add margarine and mix until crumbly. Reserve one cup. Press remaining mix on bottom of pan and bake 10 minutes and cool. Top with nuts and chocolate chips. In a medium saucepan, melt caramels and water and stir until smooth. Remove from heat and drizzle over chocolate chips (within 1/4 inch of edge). Sprinkle reserved oat mix on top. Bake 15 - 18 minutes. Cool, chill until chocolate sets.

 

Sweet Dough Rolls

Mother always loved to make rolls. I'm not sure she ever bought rolls at the store for a family holiday meal. She would also make us donuts on occasion, which were a real treat.

Sweet Dough Rolls:

Mix together 2 cups of lukewarm milk, 1/2 cup sugar, and 2 teaspoons salt. Crumble 2 cakes (or 2 packages) yeast into liquid mixture until dissolved. Stir in 2 eggs and 1/2 cup soft shortening. Add 7 - 7 1/2 cups sifted flour. Mix well. Let rise until double in bulk. Punch down and let rise again. Shape into rolls and let rise until double in size. Bake 10 minutes in oven which has been preheated to 450. (Note: If desired, after rolls have been shaped, they may be frozen and baked at a later date.)

Richer Sweet Dough (For Donuts):

1 cup milk

1/2 cup sugar

1 teaspoon salt

2 cakes yeast

2 eggs

1/2 cup shortening

4 1/2 - 5 cups flour

For donuts, do not let rise a second time - instead roll mixture out and cut donuts and pop into very hot grease.

Milky Way Cake

I don't actually ever remember Mother making this cake, but I wanted to share it because of the first ingredient. It will show the age of this recipe. And, it sounds pretty good...

Milky Way Cake:

8 - 5 cent Milky Ways (Really????)

2 sticks oleo

2 cups sugar

1 teaspoon vanilla

1 cup buttermilk

2 1/2 cups flour

1 cup pecans

4 eggs

1/2 teaspoon soda

Melt Milky Ways and mix well.  Bake in tube pan at 300 for 1 1/2 hours. That's it....that's all it says. I am going to assume you cream butter, eggs, and vanilla with sugar first and then add buttermilk, flour, and soda.  Then add melted candy and pecans last.

Cowboy Cookies

Just found this recipe. Mother made these often for home and for showers. I really think she liked them as much as she said Daddy liked them.

Cowboy Cookies:

1 cup Crisco

1 cup granulated sugar

1 cup light brown sugar

2 eggs

2 cups oatmeal

2 cups flour

1 - 6oz. pkg. Nestle's chocolate chips

1 cup chopped pecans

1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon vanilla

Cream Crisco and gradually add sugar. Then add eggs, one at a time beating well. Add oatmeal, flour, salt, baking powder, baking soda, and vanilla. Using spoon mix nuts and chocolate chips to batter. Form into balls about 1 1/2 " in diameter. Place on greased baking sheet about 2" apart. Bake at 375 for 10-12 minutes, until lightly brown.

Yuletide Toffee Squares

I don't think I remember Mother ever making these, but due to the season and them sounding so good, I thought I would share. So......if you try them, you have to let me know how they are.

Yuletide Toffee Squares:

4 1/2 cups oats

1 cup brown sugar

3/4 cup melted oleo

1/2 cup corn syrup

1 tablespoon vanilla

1/2 teaspoon salt

1 - 12 oz. package Nestle's chocolate chips

2/3 cup chopped nuts

Grease 15 x 10 x 1 jelly roll pan. Combine all but chocolate chips and nuts and firmly press into bottom of pan. Bake 18 minutes at 400 until brown and bubbly. Remove and immediately sprinkle with chocolate chips. Let stand 10 minutes. Spread melted chocolate evenly over top and sprinkle with nuts. Cool completely and cut.

Five Cheese Log

Another Christmas Eve favorite.

Five Cheese Log:

12 oz. Cheddar cheese

8 oz. American cheese (blue box???)

8 oz. Velveeta cheese

8 oz. Mozerella cheese

8 oz. Philiadelphia cream cheese

1 teaspoon liquid smoke or smoke salt

2 teaspoons chives

1 teaspoon Worchestershire sauce

1 teaspoon garlic salt

chopped nuts

Mix all above ingredients after grating cheeses. Form into logs (about 6) and roll in chopped nuts. Serve with assorted crackers.
